Our main focus is on supplying Caldera customers with meat we believe in and meat that we feed our families on a regular basis. For us, this means grassfed beef, pasture-raised pork, and regeneratively raised or certified organic chicken. We also choose to feature cuts we simply can’t live without, like our housemade sausage and Prime Tri-tip. Because where we’re from, a Prime Tri-tip and handmade sausages grilled over red oak are as much a part of our cooking culture as the beautiful Calderas are a part of our local terroir.
We prioritize working with folks we know and have worked with for years, many of whom are family-run operations that have been ranching our land for generations. Occasionally, as our program expands, we’ll reach outside of our local foodshed to include others who meet our sourcing standards. At the end of the day, we source from people we’d invite to dinner, because they tend to be our kind of people.
All of our grassfed beef is raised entirely on pasture, eating a natural diet of grasses and forage. We also source exceptional grain-finished beef from our preferred vendors for folks interested in additional marbling and less of a toothsome bite. Our chickens and our pork are also truly pasture-raised, spending their lives outdoors and free from confinement. Each animal’s life begins and thrives on open rangeland.
This is a unique feature of Caldera that we are most proud of. The short answer is yes, our meat tastes more like meat than any meat you may have ever had. Our grassfed beef is free to roam wildland pasture, eating wild forage, and is aged for a very specific amount of time at our USDA facility. Our pigs are free from confinement and as close to the wild as we can keep them without losing them all to a family of mountain lions. Our chickens aren’t raised in barns and force-fed GMO feed—they’re raised entirely on pasture, under the sun and moon, free to chase bugs, pick scratch, eat grass, and are Certified Regenerative, Certified Organic, GMO free, air-chilled, and flash frozen. This means not only does our beef taste “more beefy,” our pork tastes more like pork, and our chicken is worth gnawing off the bone (instead of falling off the bone into a puddle of oil). It’s got a bite to it that reminds you—you’re a meat eater, and you’re eating good meat. We believe this is a healthy reminder of our intentional practices, the hardworking partners we call friends, and the time-honored ranching legacy we call “the office.” We know it’s a healthier and more sustainable way to eat.
While we do our best to keep up with demand and give everyone what they want, the harsh reality is that ‘God ain’t making more land,’ and there are only so many animals we can raise or source. This means sometimes you won’t be eating a filet for lunch—but a whole roasted chicken for dinner feeds more people! So please be patient during restocking periods, branch out when you have to, and enjoy the delicious diversity.

We recommend refrigerating any items you plan to cook within 2–3 days to allow these items to thaw slowly. For longer storage, keep the contents of your box frozen. All Caldera meats are vacuum-sealed immediately after processing to maintain peak freshness and flavor.
Cuts are vacuum-sealed in heavy-gauge, freezer-safe packaging. Labels include the cut name, weight, and any special handling notes. Our goal is to make storage, thawing, and cooking as simple as possible.
You can skip or cancel anytime. Simply log into your customer profile to place your box on hold or cancel your subscription altogether.
You can adjust your subscription in a few ways. The three main boxes (Ridge, Range, or Caldera) come as set options and cannot be substituted, but you can add extras from the drop-down menu of add-ons before checkout.
Absolutely. Our meat boxes make exceptional gifts for holidays, corporate clients, or special occasions. Simply purchase a gift card in the amount of a box, and it will be emailed directly to your recipient, so they can redeem it for the box of their choice when they’re ready.
