Our Founders
Daniel Sinton and Jensen Lorenzen are the co-founders of Caldera Meats and Provisions, a premium meat company rooted in the rugged volcanic soils of California’s Central Coast. Caldera serves as the online and subscription division of Sinton and Sons.
Daniel Sinton
Daniel Sinton is a rancher, businessman, and vintner whose family has stewarded the Central Coast for five generations. As owner of Avenales Ranch, he carries forward a legacy of sustainable land management and responsible cattle ranching in the rolling hills of San Luis Obispo County. His work is guided by the belief that healthy soil, open pasture, and thoughtful stewardship produce not only stronger herds but also a stronger community.
In addition to his ranching leadership, Daniel is a founding partner of Avenales Wine, a label that reflects his family’s deep ties to the land and their commitment to producing wines with both character and a true sense of place. For him, ranching and winemaking share the same philosophy: authenticity, tradition, and patience yield the finest results.
Through Caldera Meats & Provisions, Daniel unites his lifelong experience in agriculture with a vision of connecting families directly to the source of their food. His hands-on knowledge of ranching, paired with a dedication to regenerative practices, ensures that Caldera customers receive meat of the highest quality and integrity.
Jensen Lorenzen
Jensen Lorenzen is an award-winning chef, entrepreneur, and food writer with nearly two decades of experience shaping the Central Coast food scene. His career has been guided by a deep respect for local farmers, ranchers, and the land that sustains them.
He first gained recognition as a chef and restaurateur, running celebrated kitchens on the Central Coast of California where his menus highlighted seasonal ingredients and the work of nearby producers. That commitment to connecting people with the source of their food inspired him to co-found The Larder Meat Co., one of the nation’s first online subscription-based meat businesses. Through curated boxes and recipes, Jensen made pasture-raised meat from local producers accessible to households across the country.
In addition to his culinary ventures, Jensen has been a contributing writer for Edible Magazine and is the author of The Daily Grind, a cookbook that celebrates everyday cooking with honest, carefully sourced ingredients. The book emphasizes the most accessible and affordable “daily-driver” cuts—ground beef, pork, and chicken—bringing creativity and care to the staples of the home kitchen.
Today, as Director of Retail for Sinton and Sons and Co-Founder of Caldera Meats & Provisions, Jensen continues that mission. By pairing his culinary expertise with entrepreneurial vision, he develops value-added products for Sinton and Sons, curates the selection of premium meats and provisions for our retail locations, and now with Caldera offers these butcher shop favorites conveniently shipped right to your door.
